Two Different Problems, Two Different Solutions
Descaling and backflushing are both espresso machine maintenance, but they address completely different issues with different chemistry. Understanding which to do when prevents the mistake of doing the wrong one — or skipping one because you did the other. You need both; they don't substitute for each other.
Backflushing — Coffee Oil Removal
What it removes: Rancid coffee oil buildup in the group head, 3-way solenoid valve channels, and portafilter basket. Chemistry: Enzymatic/alkaline detergent (Cafiza, Puly Caff) that breaks down fatty acids (coffee oils are lipids). When: Weekly for home machines pulling 1–3 shots daily. How you know it's needed: Shots taste increasingly bitter or rancid even with fresh beans; expelled water during backflush is brown and oily (vs running clear when clean).
Backflushing cannot remove mineral scale — the chemistry doesn't address calcium carbonate. Running cafiza through a descale cycle causes no harm but accomplishes nothing for scale removal.
Cafiza Espresso Cleaning Powder
$The enzymatic backflush detergent — coffee oil removal from group heads. 1g per cycle, weekly for home machines.

What it removes: Calcium and magnesium carbonate (limescale) from boilers, heating elements, and internal water paths. Chemistry: Acidic solution (citric acid, malic acid, or proprietary acid blends) that dissolves calcium carbonate. When: Every 2–3 months in hard water areas; every 6 months with filtered/soft water. How you know it's needed: Machine takes longer to heat, steam pressure has decreased, temperature instability, or white flakes in the drip tray.
Descaling cannot remove coffee oil — acid doesn't break down lipids effectively. Running descaler through a backflush cycle causes no harm but doesn't clean the group head pathways.
Dezcal Espresso Descaler
$Citric acid descaling solution — mineral scale removal from boilers and water paths. Different chemistry than cafiza, different job.

☕ Key Takeaway
Do both, on separate schedules. Backflush weekly with Cafiza (coffee oil removal). Descale every 2–6 months with Dezcal (mineral scale removal). They're not interchangeable — different chemistry for different deposits.
